Today's opening stock is simply last night's closing snapshot, carried forward automatically: suggested par ≈ average daily consumption × lead time + a safety buffer (e.g. 0.6 bottles/day × 3-day lead time + 1 buffer ≈ 2.8 bottles). A bottle with half a peg left and high daily usage ranks above one that's merely below par but has weeks of runway, the difference between reacting and actually planning.

Deliveries tracks what actually arrived against what was ordered, catching short shipments or substitutions immediately instead of at the next stocktake. If 2 bottles were ordered but only 1 arrives, it's logged as a short delivery right away, a known, explained gap instead of an unexplained shortfall that shows up as “bad variance” three weeks later.
